The Grove

Put together Doug Wallace’s Scottish stubbornness and boundless energy plus Kevin Wallace’s affinity for growing and nurturing trees and penchant for anything Italian and you have a couple of blokes who produce some really good oil.
Doug and Kevin established the grove 10 years ago and there are currently 4000 with a mix of species for oil (Picual, Leccino and Frantoio) and table fruit (Volos, Kalamata). The trees are supported through drip irrigation but this is used sparingly when the trees are at peak stress levels - they figure that the struggle gives the trees some rigour and heart.
Harvesting occurs during June and July of each year using an overhead straddle harvester – perfect for the hedge row style of the grove. Processing needs to occur within 12 to 36 hours after harvest and this is carried out using the Estate’s processor. The Estate also processes olives from other groves, so please be in contact if you would like further information.
